Ein Dutch-Oven ist eigentlich ein besonderer Topf, den man auch als normalen Topf verwenden kann. Ursprünglich besteht er aus dickwandigem Gusseisen und einem dicht schließenden, flachen Deckel, der einen nach oben hin umlaufenden Rand hat. Der Griffknopf am Deckel ist aus hitzebeständigem Material (z.B. Keramik). Am Topfboden befinden sich drei kurze Füße und außerdem besitzt der Topf noch einen Bügelhenkel.

Wofür die Füße?
Die Füße dienen dazu, den Dutch-Oven, wenn er zum Backen benutzt wird, über einer Schicht Glut zu halten. Der flache Deckel mit erhöhtem Rand eignet sich dazu, glühende Holzkohle darauf zu häufen und damit für die richtige Oberhitze zu sorgen.
Der Henkel ist sehr praktisch, wenn man den Dutch-Oven über dem Feuer aufhängen will, um darin zu kochen. Außerdem kann man ihn so im heißen Zustand problemlos mit einem Ast hochheben und vom Feuer nehmen.

Die wesentlichen Eigenschaften des Dutch-Oven – und deshalb sollte er aus Gusseisen bestehen – sind, dass er die Hitze langsam aufnimmt, gleichmäßig verteilt und lange hält. So gleicht er die Temperaturschwankungen des Feuers aus.
Dank dieser Eigenschaften, ist der Dutch-Oven bestens geeignet um Speisen langsam und schonend zu garen. Da der Deckel dicht schließt und wegen seines hohen Gewichts fest aufliegt, können Aroma und Saft nicht entweichen.
Der Dutch-Oven gart mit eingeschlossener Hitze und ist daher besonders für größere Fleischstücke, Aufläufe, Fisch und Gebäck geeignet. Man kann alles was man zuhause im Backofen zubereiten würde, im Dutch-Oven machen.
Bevor man seinen neuen Dutch-Oven in Betrieb nimmt, sollte man ihn mit einem salzfreien Fett einreiben und dann für einige Zeit bei Zimmertemperatur stehen lassen, damit er das Fett aufnehmen kann. Diese Prozedur muss man solange wiederholen, bis das Gusseisen kein Fett mehr aufnimmt.
Um den Dutch-Oven zu reinigen, genügt ein Lappen und heißes Wasser. Man sollte niemals mit Spülmittel oder Seife den Topf innen reinigen, da das Gusseisen den Geschmack der Seife aufnehmen und die Speisen ungenießbar machen würde.
